What are Bitters? Bitters are infused herbs and spices with a bitter taste that are placed on your tongue before or after a meal. The bitterness activates our digestive system. In today’s modern times, the foods we consume are often filled with high sugar and salt, lacking the stimulating digestive work of bitterness, which is vital to our health. As we know, a healthy gut is key. Long ago, wild bitter salad greens were served before meals to serve a preparational purpose. Since then, those bitter greens have been replaced with iceberg lettuce drowned in artificial dressing. The modern salad has lost its original purpose.
